South Philly Cheesesteak Mac N’ Cheese – UFC Vegas 16

Tonight in Las Vegas, at UFC Vegas 16, Jack Hermansson meets Marvin Vettori in the card’s main event.

It is a bit colder this weekend in the northeast and I wanted some comfort food.  Something easy to make, but yet something that would warm me up and allow me to sit comfortably on the couch while watching the fights.  For me, Mac N’ Cheese is just one of those foods, but I wanted to do something a little different.  I also had a craving for a good cheesesteak, thus the combination of the two is what was on the menu.

Below is our recipe for South Philly Cheesesteak Mac N’ Cheese.


1-pound Cavatappi pasta

2 tablespoons olive oil

2 large onion, thinly sliced

black pepper/salt to taste

3 tablespoons butter

3 tablespoons all-purpose flour

3 cups milk

1/2 cup beef stock

2 cups shredded provolone cheese

3/4 pound thinly sliced deli roast beef, chopped

1/4 cup fresh flat-leaf parsley, chopped



Boil water in a large pot.  Add pasta, little salt.   Cook until noodles soft.  Drain and return noodles to pot.

While pasta is cooking, heat oil in large skillet.  I used a cast iron skillet.  Add onions, season with salt and pepper.  Stir and cover with a lid for 3 minutes.  Remove lid, stir.  Repeat every 2-3 minutes until onions are caramelized.

While onions are caramelizing, melt butter in another pot over medium heat.  Add flour after butter is completely melted.  Stir. Cook for 1 minute.

Add milk to butter-flour mixture and whisk.  Cook for about five minutes until thickens and boils.  Remove from heat and add 1 1/2 cups of cheese.  Add salt and pepper to taste.  Stir.

Preheat boiler on oven.

In the skillet with the onions, add beef stock and roast beef.  Stir until warm.

Add cheese sauce and onion-roast beef mixture to the pot with drained pasta.  Stir/combine well.  Return mixture back to the large skillet or use a casserole dish to scoop everything into.

Top with remaining 1/2 cup of cheese.  Place it under broiler for 3 minutes.  Remove from oven.  Garnish with parsley.
